It's not too surprising that Apple released the iPhone 4S model instead of the much rumored iPhone 5. With the holiday shopping season too close to the 4S's actual release date of October 14, there was probably a grave chance that many people weren't going to be able to obtain one, if it was the iPhone 5. It's a given probability that the phone would've sold out instantly, leaving many empty Christmas stockings for those wishing to buy one. Of course, iPhone enthusiasts should have seen this incremental upgrade coming.
